Smoking a Savory Pork Shoulder
As smokers have grown in popularity, this course instructs new cooks on the steps to finish a pork shoulder on their new grill. Users are enticed further by the challenge of cooking "the meal of the summer".
Problem:
Smoking meat has become increasingly popular amongst average grillers. Pork shoulder is said to be an easy and forgiving start to those new to smoking. This training illustrates the methods in cooking this meal for beginners that can be paralleled with other foods.
Solution:
Through a four part module, cooks are guided and assessed on prep, setup, cooking, and serving. The premise of the lesson will be to make a meal that will make the cook the talk of the neighborhood.
Result:
Not only to be used for this meal, but cooks who go through this training will be able to apply these skills to other meats. For this particular meal, the learner will have cooked a finished, juicy, and tasteful piece of pork.

Cooks will do a matching activity of practices in smoking to follow or not. Items and practices will be dragged and dropped to either 'a good meal' or 'get a frozen pizza'.
Flashcards will have pictures and videos of necessary materials and practices for cooks.
A final set of matching, multiple choice, and fill the blank activities will act as a summative assessment.
